การพัฒนากระบวนการผลิตหน่อไม้ไผ่รวกที่เหมาะสมสำหรับวิสาหกิจชุมชน: ผลของการต้มและการนึ่ง ต่อคุณภาพ คุณค่าทางโภชนาการ และประสิทธิภาพการผลิต

บทคัดย่อ

งานวิจัยนี้มีวัตถุประสงค์เพื่อพัฒนากระบวนการแปรรูปหน่อไม้ไผ่รวกแบบต้มของกลุ่มวิสาหกิจชุมชนในจังหวัดปราจีนบุรีให้มีประสิทธิภาพ คงไว้ซึ่งคุณค่าทางโภชนาการและสารออกฤทธิ์ทางชีวภาพที่สำคัญ รวมทั้งมีคุณภาพตามที่ผู้บริโภคยอมรับ หน่อไม้ไผ่รวกของกลุ่มวิสาหกิจชุมชนในจังหวัดปราจีนบุรีที่มีความยาวแตกต่างกันถูกแบ่งออกเป็น 3 ส่วนตามตำแหน่งความยาวได้แก่ ส่วนปลาย ส่วนกลาง และส่วนท้ายถูกนำไปต้มและนึ่ง และนำมาวิเคราะห์หาปริมาณโปรตีน เยื่อใย สารประกอบฟีนอลิก และการเปลี่ยนแปลงของค่าสีและเนื้อสัมผัส และกระบวนการที่เหมาะสมถูกนำไปขยายขนาดกำลังการผลิตเพื่อประเมินระยะเวลาในการผลิตที่เหมาะสม ผลการทดลองพบว่า ปริมาณโปรตีนในหน่อไม้ไผ่รวกที่ตำแหน่งความยาวของหน่อไม้ (จากปลายยอดถึงโคน) มีค่าแตกต่างกันอย่างมีนัยสำคัญ (p equation 0.05) โดยส่วนปลายจะมีปริมาณโปรตีนสูงกว่าส่วนกลางและส่วนท้าย ในทางตรงกันข้ามปริมาณเยื่อใยจะพบมากที่สุดในส่วนท้าย ตามด้วยส่วนกลางและส่วนปลายของหน่อไม้ตามลำดับ เมื่อให้ความร้อนกับหน่อไม้โดยการต้มและการนึ่งพบว่า รูปแบบการแพร่กระจายความร้อนและระยะเวลาในการส่งผ่านความร้อนของหน่อไม้ส่วนปลายจะมีอุณหภูมิที่คงที่เร็วกว่าส่วนกลางและส่วนท้าย แต่อย่างไรก็ตามอัตราเร็วในการแพร่กระจายความร้อนในหน่อไม้ระหว่างการต้มและการนึ่งไม่แตกต่างกันอย่างมีนัยสำคัญ (p equation 0.05) หน่อไม้นึ่งมีปริมาณโปรตีนและสารประกอบฟีนอลิกสูงกว่าหน่อไม้ที่ผ่านการต้ม ค่าสีและเนื้อสัมผัสของหน่อไม้ที่ผ่านการนึ่งจะมีค่าความแข็งน้อยกว่าการต้มและมีสีเหลืองที่เข้มกว่า กระบวนการนึ่งจึงถูกคัดเลือกเพื่อนำไปทดลองในระดับขยายขนาดด้วยหม้อนึ่งความดันไอน้ำในปริมาณ 1 และ 5 กิโลกรัมต่อถุง ที่ระดับกำลังการผลิต 1 ตันต่อรอบการผลิต ผลการทดลองพบว่า การนึ่งหน่อไม้ในถุงขนาดบรรจุ 1 กิโลกรัมต่อถุง จะใช้ระยะเวลาในการนึ่งนาน 9 ชั่วโมง ในขณะที่หน่อไม้บรรจุถุงขนาด 5 กิโลกรัมจะใช้เวลา 14 ชั่วโมง โดยคุณสมบัติทางกายภาพของหน่อไม้ (สีและความแข็ง) แตกต่างกันอย่างไม่มีนัยสำคัญทางสถิติ การศึกษานี้ชี้ให้เห็นว่าการนึ่งหน่อไม้ด้วยไอน้ำเป็นกระบวนการผลิตที่เหมาะสมกว่าการต้ม ช่วยลดการทำลายของสารสำคัญในหน่อไม้ และสามารถขยายกำลังการผลิตสู่ระดับวิสาหกิจชุมชนได้
