การศึกษาศักยภาพของเครื่องมือออกแบบสูตรอาหาร Recipe Model Canvas 1.0 ผ่านกรณีศึกษามายองเนส สมุนไพรไทย

บทคัดย่อ
งานวิจัยนี้มีวัตถุประสงค์เพื่อทดลองใช้แนวคิด Recipe Model Canvas (RMC) ซึ่งผู้วิจัยเคยพัฒนาขึ้นมาก่อน ให้กลายเป็นเครื่องมือ RMC 1.0 ที่สามารถประยุกต์ใช้ได้จริงในการออกแบบสูตรอาหารอย่างเป็นระบบ โดยเครื่องมือนี้ครอบคลุมองค์ประกอบสำคัญ ได้แก่ อัตลักษณ์วัตถุดิบ เทคนิคการปรุง การจัดเสิร์ฟ และการสื่อสารเมนู ผู้วิจัยใช้ระบบปัญญาประดิษฐ์ (AI) ได้แก่ ChatGPT, Claude และ Gemini เพื่อพัฒนาแนวคิดและสูตรต้นแบบของมายองเนสสมุนไพรไทยจำนวน 4 สูตร ได้แก่ สูตรจาก AI เพียงอย่างเดียว (F1) และสูตรที่เกิดจากการผสาน AI กับ RMC (F2–F4) จากนั้นนำไปประเมินด้วยการทดสอบทางประสาทสัมผัสโดยผู้บริโภค 50 คน โดยใช้แบบประเมิน 9-point hedonic scale และแบบสอบถามเกี่ยวกับความเป็นไทย ความแปลกใหม่ และความเข้ากันกับอาหาร
ผลการวิเคราะห์ ANOVA พบว่าสูตรที่พัฒนาด้วยการผสาน AI กับ RMC มีคะแนนความชอบสูงกว่าสูตรที่ได้จาก AI เพียงอย่างเดียวอย่างมีนัยสำคัญทางสถิติ (p < 0.05) โดยเฉพาะสูตร F2 (ChatGPT + RMC) ที่ได้คะแนนสูงสุดในด้านรสชาติ กลิ่น และความพึงพอใจโดยรวม นอกจากนี้ การวิเคราะห์ค่าสหสัมพันธ์พบว่า “ความเป็นไทย” (r = 0.449) และ “ความแปลกใหม่” (r = 0.405) มีความสัมพันธ์ในทางบวกกับ “ความชอบโดยรวม” อย่างมีนัยสำคัญทางสถิติ (p < 0.05)
ผลวิจัยนี้แสดงให้เห็นว่า RMC 1.0 มีศักยภาพในการเป็นเครื่องมือออกแบบสูตรอาหารที่มีความเป็นระบบ และสามารถสนับสนุนการพัฒนาผลิตภัณฑ์อาหารที่สอดคล้องกับบริบททางวัฒนธรรมได้อย่างมีประสิทธิภาพ
