Abstract

Black sugarcane is a plant that contains a variety of bioactive compounds. This study aimed to evaluate the total phenolic and anthocyanin contents and the antioxidant activity in the juice and juicing residue of two black sugarcane genotypes and to examine the relationship among these substances. The experiment analyzed juice extracted from peeled and unpeeled stalks, rind, pith, and bagasse of ‘Black Khmer’ and ‘Ratchaburi’ genotypes, comparing extractions with water and 70% ethanol. The juice extracted with ethanol from the unpeeled stalks of the ‘Black Khmer’ showed the highest content of bioactive substances, including phenolics (328.48 µgGAE/mL), anthocyanins (15.30 µg/mL) and antioxidant activity (256.09 µgTE/mL). The ethanolic extract from rind and bagasse of ‘Black Khmer’ contained higher amounts of phenolics, anthocyanins, and antioxidant activity than those of ‘Ratchaburi’ genotype. However, the pith of both genotypes exhibited similar levels of these substances, with very low anthocyanin content. The ethanolic extract from the rind of ‘Black Khmer’ contained the highest levels of bioactive compounds with phenolics (6,937.50 µgGAE/gDW), anthocyanins (1,410.50 µg/gDW) and antioxidant activity (3,860.04 µgTE/gDW). There was a strong positive correlation between phenolics, anthocyanins, and antioxidant activity in black sugarcane juice, rind, and bagasse (r = 0.64** to 0.97**). These findings can be used as information for further utilization of black sugarcane.
